Good questions Scott,

Miami is a public, mid-sized (18,000 mostly undergrad) and we have a max
capacity in our auditorium of about 150.  We have 160-165 registration max
knowing that we usually have about a 20% no-show.

What we say to people calling about full tours is that we can't guarantee a
spot in the presentation, we always have no-shows so there is a good
possibility they could get a seat.  If not they can definitely go on the
walking tour and talk one-on-one with an admission representative following
the tour.  We have them essentially become walk-ins telling them that we
can't register them on a full tour but will take their information down
when they show up, then we have them wait outside the auditorium, assess
our space when heading in to start and make the call if they are in or
waiting until the walking tour 30 minutes later.
